spinach and chickpea saute

Garlic Oil, 2 tbspSpinach, 1 can drained wellChick peas, 1 can drainedlemon halfonion, 1 medium, small dicecumin, ground, 1 tspturmeric, ground, 1 tspsalt and pepper to taste
makes 2 2cup servings
Add oil to pan and heat until shimmering. Add diced onion and saute until starting to brown, about 8 min. Add drained spinach to pan and saute 2 min to dry out spinach. Add rest of the ingredients and saute 5min or until everything is heated through. If you like things spicy add some red pepper flakes. This can be served atop a roasted yam or cous cous to make it more substantial. This can also be used as a great side dish to lamb, roated chicken, or even steak and a potatoe.
