Ingredients
1 tbsp olive oil5 beets1 large onion3 stalks celery3 carrots3 potatoes1/4 cup vinegarsalt & pepper to taste5 cups stock (veggie or beef)2 cups cabbageHeat oil and saute onions and celery until soft. Add potatoes, carrots & cabbage and pour in the soup stock. Bring to a boil and then reduce heat and simmer for 15 minutes, covered. Add chopped beets and cook for another 15 minutes (3 minutes if already cooked). Add Vinegar, salt and pepper to taste. Blend to desired consistency. Garnish with sour cream if desired.
