Ingredients
1/2 cup Egg Substitute1 slice Turkey Breast meat, cubed1/4 cup sliced mushrooms, chopped2 Tbsp green onion, sliced2 cherry tomatoes, cut in half2 tbsp salsa to top
Directions
Mix together egg substitute, turkey, mushrooms, onion and tomatoes in microwavable omelet container. Microwave for 3 minutes. Top with Salsa. Yields 1 omelet.

    I saute my veges in a small skillet for a few minutes to add a little more flavor and texture. I place them on one half of the omlet when it is nearly done,fold over,cook about 30 seconds, then slide it on my plate! - 11/27/10
