6 chicken breasts2 tbsp. EVOO2 tbsp. butter1 cup of chopped onion6 garlic cloves minced1/2 cup parsley ( I like Italian) chopped
Cut chicken breasts into bite size pieces and season with salt and pepper and sautee with oil, butter, chopped onion. and chopped garlic....when chicken is done...pour lemon juice over the top and microplane the skin of one of the lemons and sautee for about another 3 minutes. Top with the parsley and serve over whole wheat pasta or brown rice...or use it to top a bed of fresh greens for a kick butt salad :-)
