Outrageous Soy Flour Muffins

Ingredients
1/3 cup soy flour1/3 cup brown sugar1/3 cup cornmeal1 cup whole wheat flour1/4 cup wheat germ3/4 teaspoon salt1 cup almonds, ground1 teaspoon baking soda2 eggs, beaten1 cup plain yogurt1 teaspoon vanilla extract1/3 cup canola oilGrated peel of 1 large orange (about 1 tablespoon), optional1 cup dried cranberries (or mix of dried fruits to equal 1 cup, such as raisins, currants, dried apricots, etc)
Directions
Mix dry ingredients and dried fruit together in a large bowl. Combine liquid ingredients and orange peel, if using, and stir into dry ingredients just until moistened. Batter should be lumpy. Fill paper-lined muffin tins 2/3 full. Bake in preheated 350F oven for about 25 minutes. Makes 12 muffins.
