'Mock' Loaded Baked Potato Soup

Ingredients
1 large head of cauliflower2 T. olive oil1/2 small onion, chopped4 c. low sodium or fat free chicken broth (I used 99% fat free)1/2 c. 1% milk1/2 c. bacon bits - I cooked turkey bacon and crumbled it up1/2 c. cheddar cheese - I used light2 T. fresh chopped chives
Directions
Steam cauliflower in pan to soft. Drain water and place on baking dish with 1 T. oil, salt & pepper to taste. Put in oven and broil to golden. Chop onion and saute with 1 T. oil to tender. Add cauliflower back in pan along with broth - simmer 10 min. Remove half of mixture and puree in blender. Recombine with rest of soup, add cheese, bacon & chives. Heat until cheese melts. Makes 6 servings.
