Acorn Squash with Blue Cheese and Honey

1 Acorn Squash1/4 Cup Blue Cheese (Reduced Fat -"Treasure Cave").5 oz. (or 7 halves) Walnuts, chopped1 Tbsp. Honey1/4 Tsp. fresh ground black pepper to taste
1. Cut acorn squash in half from top to bottom starting at stem. Slice a bit off the bottom of each half so that they sit flat and don't fall over. Scoop out all the seeds with a spoon.
2. Drizzle tops with olive oil and rub a little on the bottom of each squash so they don't stick to the pan.
3. Divide in half the blue cheese and walnuts. Place (.5 oz.) walnuts in each half of squash then top with (1/8 cup) blue cheese crumbles in each half. Add black pepper to taste.
4. Drizzle honey on top and bake at 375 for 25-30 minutes or until the squash is fork tender.
*Great with grilled or baked Chicken Breast - Boneless, skinless of course!
