Lentil Curry

Ingredients
1tbsp vegetable oil1 onion, chopped2 cloves garlic, minced1tbsp ginger root, minced1tbsp curry powderpinch hot pepper flakes (to taste)dash cinnamon2 cups water1 cup green lentils1 large potato, chopped1 cup chopped carrots1 cup corn kernels1 can tomato sauce (398ml / 14oz)1/2 cup chopped tomatoes
Directions
In large pot, heat oil and cook onion and garlic over medium heat for 5 minutes, stirring regularly.

Stir in ginger, curry powder, cinnamon, and pepper flakes; cook for 1 minute while stirring. Add water and the lentils, bring to a boil, cover, and simmer on low heat for about 25 minutes.

Add potato and carrots, cover, and cook for another 15 minutes, until lentils and veggies are tender. Stir in corn, tomatoes, and tomato sauce, cover, and cook for 5-10 minutes until heated through.

Makes 6 1-cup servings.
