Honey Applesauce Cake

Ingredients
1 stick of light margarine or butter1 cup honey1 cup unsweetened applesauce1/2 cup egg substitute1 tsp cinnamon1 tsp vanilla2 1/2 cups of Pioneer Brand or Betty Crocker Buttermilk Pancake Mix1/2-1 cup chopped walnuts (optional)
Directions
Preheat oven to 425 degrees. Place margarine in a large mixing bowl, softened, with the honey and mix together well by hand. The add the applesauce and egg substitute and mix on low setting until everything is blended. Add cinnamon, vanilla, and pankcake mix and continue mixing until everything is well blended. Fold in the nuts if desired. Lightly oil either 2 8 inch pans or 1 11x7 inch pan and pour in the batter. Cook for approximately 20-25 for 8 in pans, 25-30 for 11x7 pan, checking the center to make sure it is done. Cut into squares and serve warm. Can be iced with a light cream cheese icing if you like.

    This is a moist and tasty recipe. I baked it in a loaf pan. If you bake it this way reduce the oven temp. to 325-350. It has more of a honey flavor than applesauce, but still good. I put light margarine an a thin slice and microwave for 12 secs. - 10/5/13
