1/3 cup oil-packed sun-dried tomatoes, drained1/4 cup almonds1/4 cup packed fresh mint leaves2 tbsp extra-virgin olive oil2 tbsp tomato paste2 large cloves garlic, finely chopped1 tsp coarse saltPepper to taste12 oz. Barilla Plus Rotini
Combine tomatoes, nuts, mint, oil, tomato paste, garlic, salt, and pepper in food processor, process until fairly smooth.
Cook pasta in boiling salted water according to directions, drain. Add sun-dried tomato mixture, toss, serve warm
