Ingredients

    1 large tomato, cored and sliced into wedges
    1 large peach, cut in half, pit removed and sliced into wedges
    2 tablespoons chopped fresh basil
    1 teaspoon olive oil
    1 teaspoon red wine vinegar
    salt and pepper to taste
    1 ounce crumbled reduced-fat feta

Directions

Arrange the tomatoes and peaches in a bowl and sprinkle on the basil. Drizzle on the oil and vinegar, season with salt and pepper, and add the cheese.
Serve immediately.

Serving Size: Makes 2 salads.

    I knew it be good when I had all of the ingredients. My peaches were a bit hard, my tomatoes a little too soft and I used cider vinegar with a drop of balsamic. It was delicious. Will be a go-to till the end of the season. - 8/21/13
