Crab Kofta

Ingredients
Yield: 24-30 Mini CakesIngredients:1 Tin Lump Crab Meat¼ lb. Spinach - Fresh¼ lb. Potatoes – Peeled & Diced Small2 ea Garlic Cloves – Minced1 tbsp Ginger – Minced1 tbsp Coriander – Ground1 tbsp Chili Powder1 tbsp Turmeric1-2 tsp Kosher Salt1-2 ea Red Chilies3-4 cups Oil
Directions
Method:
Blanch spinach in boiling water for 1-2 minutes, drain in colander and squeeze out the excess water.
After spinach has cooled, chop finely.
Repeat blanching process with potatoes but do not squeeze out the water.
Mix all ingredients together, except the oil, and form little balls with the mixture.
Heat oil to 325 degrees F and fry mini balls for 3-4 minutes.
Serve with any favorite dipping sauce, Chef's personal favorite is a spicy curry broth.
