Cilantro Bean Chili

1 medium yellow onion, diced1 medium red onion, diced3 cloves of garlic, diced2.5 cups Swanson reduced sodium beef stock1 15.5 oz can Great northern beans1 15.5 oz can Roman Beans1 15.5 oz can Cannellini Beans2 14.5 oz can Stewed Tomatoes (no salt added) chop up some of the larger pieces1 tsp ground Cumin 1 tsp salt1tsp pepper1.5 tsp sweet paprika1 jalapeno pepper chopped ( mine was not too hot)1 tbsp apricot jamsmall handful of fresh cilantro chopped
-Pour a little stock in the bottom of a large pan.
-Chop the onions and garlic and saute for 5 minutes in the stock.
- Add all the other ingredients except for the fresh cilantro.
-Feel free to add more seasoning according to your taste.
-Bring to a boil and then simmer for about 1.0-1.5 hours.
-Add the fresh cilantro when done.
Makes 7 1-cup servings.
Calories do not take into account the sour cream that you might add on top.
