Ingredients
1/4 cp. egg white1 large egg (whole)1/4 tsp vanilla extract (could use strawberry or almond - whatever you prefer)1 tsp turbinado sugar2 Tbsp blueberries (any berries)1 Tbsp maple syrup
Directions
Serving size: 1

Mix eggs, extract, and sugar and pour into small nonstick pan. cook mixture all the way through and flip onto other side. Remove from pan and top with maple syrup and blueberries.

    I have a similar recipe I made for years. My preference is Splenda and sugar free syrup. I like this recipe because the blueberries make the pancakes taste like something from a 5-star restaurant. - 2/3/10
