Slow Cooker Mexican Chicken

Ingredients
2# boneless, skinless chicken breast1 pack taco seasoning1 can 98% fat free cream of chicken soup1 cup chopped onion2 garlic cloves1 can (4 oz) green chiles1 medium tomato, sliced2 bunches green onions (sliced)2 cups 2% fat Mexican cheese blend
Directions
Saute onions and garlic in pan sprayed with Pam. Add all ingredients into the crock pot or slow cooker. Cook high for 3-4 hours (low 6 hours+). Shred chicken when cooked and mix everything well. Top with 1 ounce of cheese. Serve with sliced tomatoes and green onion for garnish and a dallop of light sour cream (not included in counts). Also great to put this blend on a sandwich for a yummy panini!!

    In all fairness, I didnot add the toppings at the end, but I found this recipe too bland. As well, it made so much watery sauce, that I had to sthicken it. It looked like chicken soup. - 4/14/12
