Meatballs with Mushroom Sauce

MEATBALLS:1/2 lb buffalo meat1/4 coconut flour2 eggs1/2 salt1/8 tsp pepper1/4 tsp onion powder_________________________MUSHROOM SAUCE1 cup sliced mushrooms1 cup sliced onions1 Tbsp coconut oil1 14 oz. can of light coconut milk1 Tbsp cornstarch2 Tbsp butter1 tsp salt1/4 tsp pepper
Combine the 1st 6 ingredients thoroughly. Roll the mixture into little meatballs and set aside.
Chop the onions and mushrooms. Saute the meatballs onions and mushrooms until the meatballs are brown on all sides. Using a wire whisk, combine the cornstarch and the coconut milk. When the mixture is smooth add it to the meatballs and vegetables along with the rest of the ingredients. Let the mixture simmer for 15 minutes, stirring occassionally. Serve over steamed vegetables.
