Ragout of Broccolini, Beans, Clams, & Sausage

Ingredients
2 T. olive oil1/2 c. chopped onion6 oz. hot italian sausage1 small bunch broccoli spears (peel stalks if tough)2 cloves garlic, chopped1/4 tsp. salt1/4 tsp. red pepper flakes1 can cannellini beans, drained & rinsed1 can clams, drained, liquid reserved (rinse clams if they're gritty)4 T. grated parmesan cheese
Directions
Cook onion and sausage in olive oil over high heat for 2-3 minutes, breaking sausage into small pieces. Add clam liquid and bring to a boil.


Meanwhile, wash and cut broccoli spears into 1" pieces. Add to pan with garlic, salt, and red pepper flakes and return to a boil. Cover and simmer gently 4-5 minutes, till broccoli is tender crisp.


Add beans and clams; mix well and return to simmer. Cook 2-3 minutes to heat through and mix flavors. Adjust seasoning and serve, garnished with 1 T. parmesan cheese per serving.
