Easy Spinach Lasagne

8 Barilla flat lasagne noodles1 26 oz. can spaghetti sauce (I use Del Monte Italian Herb)1 15 oz. ricotta1 eggpinch of parsleyHalf a pkg. frozen spinach, thawed and drained well1 pkg (2 c.) shredded mozzarella cheese
Mix ricotta, egg, and parsley in a small bowl.
In an 8x8 pan, spread a thin layer of sauce. Place 2 noodles down, then spread another thin layer of sauce. Top with 4 heaping spoonfuls of ricotta cheese. Scatter spinach over top. Top with mozzarella cheese. Repeat layers 2 more times. Cover top with remaining sauce and cheese. Cover tightly with aluminum foil and bake for 50 mins at 350 degrees. Take foil off and bake additional 10 mins. Let stand for 5-10 mins. and serve. Makes 9 hearty servings.

I ended up doing a makeover of this recipe. The main reason is that an 8x8 pan isn't filled by 2 noodles across. I had to use 3. I also used part skim dairy ingredients, Egg Beaters, and 16 oz spinach. And just as an idea - I didn't have any parsley, so I substituted chives - it adds a nice flavor! - 12/2/12
