Stuffed Flank Steak

Ingredients
1 lb flank steakStuffing:6 oz feta cheese1 box thawed frozen chopped spinach1 cup sun dried tomatoes - choppedMarinade2 gloves garlic chopped/minced1 cup dry red wine 1/4 cup soy sauce (sodium free to lower salt)
Directions
Marinade steak with marinade for 2 hours before cooking. (may use non-fat beef broth and meat tenderizer as a substitute)

Stuffing - mix thawed spinach, tomatoes, and feta cheese. (add/subtract to taste)

After removing steak from marinade, place stuffing at one end of the steak. Roll stuffed steak like a jellly roll and use a toothpick to secure.

Place in a 350 degree preheated oven and cook in a small oiled (olive oil) roasting pan for 45 minutes (medium) or longer for well done.
Baste with marinade if getting dry, do not use within 10 mins of removing from oven.
Let rest for 10 mins before cutting and serving.

    This meal was very good. It is even good reheated as a leftover. We left out the the sun dried tomatoes but the stuffing was fantastic. Just make sure you have a thin piece of flank steak so it cooks evenly. We will make this one again and again! - 10/17/09
