Crispy Oven Chicken Parmesan

2 lbs. skinless chicken breast cut into tender size2 oz. Panko bread crumbs2 oz. grated Parmesan cheese1/2t cayenne pepper (or to taste)1/4t black pepper (or to taste)1/4t salt1 whole egg + 1 egg whitecooking spray
Makes 16 pieces
Spray cookie sheet lined with foil with cooking spray. Mix bread crumbs, Parmesan cheese, peppers and salt, set aside. In another dish beat 1 egg plus 1 egg white til frothy. Cut each chicken breast half into 4 pieces. Dip chicken in egg mixture, then roll in crumbs. Place pieces on cookie sheet making sure they do not touch.
Bake in 425 degree oven for 30 minutes (approx) until browned and crispy.
