crepes with soy flour

Ingredients
1/2 cup of flour1/2 cup of soy flour2 tbls of melted butter2 medium eggs1 egg white1 cup of waterpinch of saltchoice of herbs for flavor
Directions
mix all ingredients well, let sit 1/2 hour before cooking.

heat pan until drops of water sizzle, add small amount of olive oil to crepe pan, pour batter while turning pan to make very thin crepe, flip when bottom is cooked
