Potato and Cheese Soup

1 oz Butter4 rashers bacon, cut into strps1 onion, fnely chopped1/2 tsp paprika2 lb. potatoes, chopped3 C. Chicken stock1 C. Shredded Cheddar Cheesechopped chives, to serve
1. melt butter in large pan, add bacon and cook until crisp. remove bacon from pan leaving the fat. Add the onion to the pan and cook for 5 minutes or until soft and golden. Add the paprika and cook for a further 30 seconds.
2. Return bacon to pan and add the potato and stock. Brink to boil, the reduce heat and simme for 30 minutes, or until potatoes are very soft. Stir or mash lightly to break up the potato. Add thecheddar and stir well, until it is meltd throg. Season with salt and pepper to taste and serve topped with a sprinkling of chives.
