Bran Flax Blueberry Muffins

1 1/2 cup Unbleached White Flour3/4 cup Flaxseed meal (ground whole)1 cup Brown Sugar2 tsp Baking Soda1 tsp Baking Powder1/2 tsp Salt2 tsp Cinnamon1 cup Carrots, shredded1/2 cup zucchini, shredded and squeezed2 apples, peeled and diced1/2 cup blueberries3/4 cup milk2 eggs, beaten1 tsp vanilla
Mix together flour, Flax seed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
Stir in carrots, zucchini, apples, and blueberries.
Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry - stir until ingredients are moistened. Do not overmix
Fill lined muffin cups 3/4 full. Bake at 350F for 20 to 25 minutes - check with toothpick for doneness.
Yields 24 muffins.
