Chicken-mushroom-tomato sauce (Aurore sauce)

2 Tbsp. flour2 Tbsp. unsalted butter2 cups chicken stock (low-sodium is fine)1/4 cup thinly-sliced mushrooms2 Tbsp. tomato puree
1. Melt butter in pan. Stir in flour. (This mixture is called a roux).
2. Gradually add chicken stock, stirring constantly so sauce remains smooth.
3. Stir in mushrooms.
4. Cook over very low heat for one hour. (A double boiler is ideal, but not essential.)
5. Stir in tomato puree and cook for two or three more minutes.
Makes 4 1/2-cup servings.
