Pumpkin Spice Mini Muffins

Ingredients
1 box Spice Cake Mix15 oz. can Pumpkin3 Egg Whites1/2 cup Water
Directions
Preheat oven to 350 degrees. Prepare mini muffin tin with non-stick cooking spray. In a large mixing bowl, combine cake mix, canned pumpkin, egg whites, and water. Mix with hand or stand mixer on low speed to blend; then mix on medium speed for approximately two minutes. Spoon batter into muffin tins. Bake for approximately 20 minutes. Recipe makes 38-40 mini muffins.
