2 Tbsp olive oil1 lb stew beef1 onion8 cloves garlic10 cups veggie broth3 beets1 cup chopped carrots4 stalks celery, chopped2 cups potato, chopped, 4 cups red cabbage, chopped
Brown the beef, onions, and garlic. Then, add all other ingredients and simmer for 2 hours. That's it! If you want, you can add fresh dill at the end, and for an extra treat, add a dollop of sour cream on top. This will fill you up and is full of good nutrients!
