Oxtails, white wine, reduced sodium chicken broth, garlic, onion, green peppers, bay leaf, paprika, white pepper, carrots, olive oil, baking chocolate, unsweetened.
Brown oxtails in olive oil in Dutch oven. Remove and set aside. Add chopped onion, garlic and green pepper. Cook until onions are translucent, about 5 minutes. Add white wine, bring to simmer. Cook for 5 minutes. Add broth and chocolate, stir to melt chocolate. Add oxtails. Cook 1 and 1/2 hours. Add carrot, paprika and pepper. Simmer until carrot pieces are tender, about 20 minutes.
