Kale, white bean and butternut squash soup

Ingredients
1 bunch kale, in small pieces1 med butternut squash, peeled and cut into cubes1 can white beans, rinsed and drained4c chicken broth
Directions
Boil butternut squash until tender, about 15min, in chicken broth. Add white beans. Puree half the mixture to thicken soup. Add kale and cook ~8min more, until kale is soft.
optional- puree after adding kale, i find this changes the color to an ugly brown but it tastes the same!

    This was delicious! I used bok choy instead of kale and added some turkey brats for a little extra protein. Hearty, filling and complex flavors. I waited to taste before adding any seasonings and found it didn't need them. I will make this again! - 12/3/13
