Saute chopped onions in oil until soft. Add minced garlic cloves and 4 cups vegetable broth. Add a bay leaf and the chopped potatoes, bring to a boil and cook until the potatoes are soft. In the meantime, thoroughly wash a bunch of fresh spinach, chop it and steam it in a very small amount of water until done.
When potatoes are cooked, take the bay leaf out, and using an immersible blender, blend them until smooth or to your liking. Add the cooked spinach. Season to taste with salt and white pepper.

where is the soy milk in the directions? i see it listed in the ingredients, but i'm not seeign when to include. am i missing it?? - 2/23/09

You can add the soy milk towards the very end of the cooking time, allowing it to heat gently so it doesn't curdle.
