Savory Sweet Potatoes

Ingredients
Sweet Potatoes, diced into 1/2 cubes (I use 3-4 medium sized, to fit into a 12 inch skillet)1 Large Onion, chopped2 Tbsp Extra Virgin Olive Oil (more or less can be used according to your preference)2-3 Garlic Cloves, mincedDash Salt & Pepper (to taste)1 Tbsp Fresh Rosemary1 Tsp Ground Turmeric
Directions
The way I like it best is over a grill, but this also can be prepared stovetop. Heat olive oil in cast-iron skillet. Saute onions & garlic, add potatoes and other remaining ingredients. Cook until potatoes are tender, around 20 minutes. Make sure you stir occassionally, and if preparing stove top, you may want to put a lid on it so that it cooks more evenly. Makes 8 1-cup servings.

    Unbelievably wonderful flavors. We never have leftovers when we make this dish. Our kids can't get enough! Just make sure the diced potatoes are bite size and uniform in thickness to ensure even cooking. The color turns a deep orange, almost bronze. - 1/30/09

    When dicing sweet potatoes, how do you keep them from oxidizing as they seem to do that awfully fast. I just bake them because of the color changing. I love them baked, hubby WON'T eat them in any way, shape or form. His Momma NEVER fixed them and so he won't try them. he's 83 & STUCK in his ways - 3/24/10
