Ingredients
8 Potatoes1 Large onion cut up6 Tsp Crisco Oil4 Hot Dogs cut in 1/2" coin slices1 Can cut green beans4 Eggs beaten in cup
Directions
Melt Crisco in large cast iron skillet. Peel and slice potatoes into 1/4" slices and fry in skillet with lid on. Add cut up hot dogs. After potatoes are fork tender, add green beans. Let simmer for about 10 minutes, stirring enough so the potatoes don't stick, to get hot dogs and beans heated up. Pour beaten egg mixture all over the top of ingredients. Put lid on and let cook for about 10 to 15 minutes stirring frequently until egg has become the consistency of scrambled eggs. Makes 8 equal servings.
