Homemade Half Wheat Pasta

1 cup unbleached flour1 cup whole wheat flour1/2 cup egg substitute1 Tbsp olive oil1/4 cup water
In bowl of food processor using the dough blade, add flours and pulse until well blended. In a seperate bowl combine egg substitute, oil and water, beat together until well blended. Turn food processor to on and slowly poor liquid mixture until dough forms ball. Continue to process for 1 minute. Turn out onto table and cover, let rest 5 minutes. Using a pasta machine roll on 1 twice, then roll on each setting 2, 3, and 4 once, finally on setting 5 roll and using fettucine blade cut into long strips; or you can roll dough with rolling pin until about very thin about 1/16 inch and cut into strips. Lay ot strips of pasta on cookie floured sheets being careful not to let them bunch up together. Let dry at least 1 hour.
Bring a pot of salted water to a boil and add pasta. Boil for approximately 6-8 minutes until desired doneness. Makes 8, 1 cup servings.
