Shake's Creole Chicken and Rice So Nice

Ingredients
Directions
2 Pounds Chicken Breast (Boneless/Skinless) Cut into bite sized pieces.2 Cups of white long grain rice1 large onion; rough dice2 cups of Red and green Peppers cut into slices or rough dice.2 Cups of diced celery3 tbsp olive oil3 tsp hot pepper sauce (your favorite will do)2 tbsp dried red pepper, cayenne, or creole seasoning. (add more or less to your taste)3 cloves of garlic diced
Cook the rice. You may do this in a stove top pot or with a rice cooker (Whichever you prefer). Add half of the dried pepper seasoning and 1 tbsp of olive oil to rice while it is cooking. Follow the cooking directions of either the rice or the cooker.
Meanwhile...
Season the chicken with the remaining dried pepper seasoning.
In a pre-heated saute pan add 2 tbsp olive oil and cook until the oil shimmers.
Add the onion, celery, and red and green bell peppers to the pan and cook until the onions and celery are translucent. This should only take a few minutes.
Add the garlic just before adding the chicken to avoid burning the garlic.
Add the seasoned chicken to the pan and cook until lightly browned.
Add tomato sauce and simmer for 5 minutes.
Add pepper sauce, salt, and black pepper to taste and serve over rice. Enjoy!
