Asparagus quiche

Ingredients
1 refrigerated ready-made pie crust, unrolled and placed into a glass pie dish.1 lb. asparagus, cut into 2 inch pieces, steamed, cooled1 c. shredded parmesan cheese1 small onion, chopped4 large eggs1 c. skim milk1/2 tsp. salt1/4 tsp. black pepper1/4 tsp. red pepper (or to taste)
Directions
Preheat oven to 375 F.

Place pie dough into glass baking dish. Set aside.

Cut asparagus spears into 1 or 2 inch pieces. Steam. Cool. Spread into bottom of pie crust.

In a small pan sprayed with non-stick cooking spray, saute onions until soft. Cool. Spread into bottom of pie crust.

Sprinkle parmesan cheese over tops of asparagus and onion pieces in pie crust.

In a medium bowl, crack eggs. Whip eggs with fork until well mixed. Add milk and spices. Pour into pie crust.

Bake for 45-55 minutes, or until knife inserted in center comes out clean. Cut into 8 slices. Serving size = 1 slice.
