Cyn's "Potato Casserole"

15 oz cauliflower2 T butter, unsalted3 oz sour cream4T bacon bits30g shredded Sharp Cheddar cheese
Steam and mash a pounds of fresh cauliflower.
Blend in butter and cream. Put in a casserole dish and top with shredded cheese and bacon.
Bake 350 for 20 mins until brown and bubbly.
