Broccoli & Cheddar Salad with Creamy Bacon Dressing

1 Tbsp (15ml) Extra Virgin Olive Oil2 cups diced Red Onion2 bunches Broccoli1.5 cups grated Skim Milk Cheddar Cheese (60 Calories per 30g)1 cup grated Carrot1 cup Golden Raisins3/4 cup Fat Free Vanille Yogurt1 tbsp White Wine Vinegar1 bottle Hormel Bacon Pieces
1. Heat oil in a skillet over medium-high heat. Sauté onion until tender and caramelized, about 4 min. Let cool.
2. Cut broccoli into small florets (about 6 cups). Combine broccoli, cooled red onion, cheese, carrot and raisins - toss until evenly mixed.
3. Combine yogurt, vinegar and bacon and mix. Pour over broccoli mixture and toss until all ingredients equally mixed.
4. Season to taste with salt and pepper and garnish with bacon.
