Ingredients
1 cup poached chicken, cubed or ripped into strands0.5 Avocado, cubed1 tbs. chopped fresh cilantroA squeeze of lime juiceSalt4 Leaves of Bib lettuce
Directions
Combine the chicken, avocado, cilantro, lime and salt.
Arrange the bib leaves, and serve the chicken salad on top. You can use chicken that you used to make stock, which is extra flavorful!

    made this for my lunch today. Didn't have Bib lettuce, so I used Organic Girl 50/50 which is a blend of spring mix and baby spinach. I tossed this with 1.5 tsp vinegar & oil, then added the chicken, avocado, parsley, lime and salt on top. Didn't have cilantro, so used parsley. Love this salad! - 2/11/13
