Tomato Sauce, 2-28oz. cans (add 1 can of water)Tomato Paste, 1-12oz. canCrushed or purred Tomatoes, 2 cupsSweet Basil - to taste Italian Seasoning - to tasteSugar - to tasteSalt & Pepper - to tasteGarlic, 3 cloves, slicedOnions, chopped, 1 cup4 lg boneless skinless Chicken Breasts cut in half.Mozzarella Cheese, sliced or gratedWhole grain pasta,(We enjoy Barilla)
This Recipe serves 8 people:
Start by putting your sauce together; add your tomato sauce, paste and crushed tomatoes. Use one of the sauce cans and add 1 can of water to tomatoes.
Add seasonings. Taste as you add and adjust to your likeing. Turn your heat on high and allow sauce to come to a boil.
Chop your onion and slice your garlic. Place in fry pan and cook until onion is translucent, then add to sauce.
Lower heat to low and let cook for at least 2 hours, tasting as it cooks to add any missing flavor.
At the 2 hour mark;
Spray an 11x16 pan with Pam.
Place a layer of sauce in the bottom of pan
Lay the chicken pieces in pan, sprinkle with salt and pepper then allow to cook uncovered, in 360 degree oven for 30 minutes.
Stir sauce on stove-top as needed.
After 30 minutes, turn chicken, add cheese to the top of each chicken breast and allow to cook uncovered for the final 30 minutes.
While waiting, cook pasta to your liking.
Serve plate with pasta and chicken breast and some extra sauce on the side.
Just a hint....Let your pasta set in some sauce prior to serving! It really gives it an extra Mmmm!
