Tomatoe, barley and lentil soup

Ingredients
1/2 cup onions (1 mediuim) chopped1/2 cup celery, chopped1 large can (28 fl oz or 3.5 cup) diced tomatoes2 garlic cloves, crushed1 cube of chicken broth1/4 cup dry barley1/4 cup dry red lentils2 cup water
Directions
Chopped onion, celery and garlic and add to a pan. Add the tomatoes and all the rest of ingredients, bring to a boil, cover and shimmer for an hour or more...

I used tomatoes w/salt, if not it a bit bland... but very delicious and nutritive.... and if you use canned chicken broth, leave the same amount of water out...

Gives 6 portion of a cup each, but I usually eat more since it is so good and low in fat and calories... Enjoy!

    Delicious!! I doubled the recipe, sauteed the onions, celery & garlic in a tsp of olive oil first, added a tbsp of Italian seasoning and a tsp of crushed red pepper, then cooked all on low in my crock pot for 8 hours. - 1/4/13
