Healthy Indian Chicken Masala

Chicken Breast (skinless): 400 gRed Onions (medium): 2Mushrooms (large): 4Canned Tomatoes: 150 g (drained weight)Yogurt (plain, non-fat): 70 gCornstarch: 2 tablespoonsOlive Oil: 2 teaspoonsDried Coriander Leaf: 1 tablespoonCurry Powder (mild): 1 tablespoonCumin Seed: 1 tablespoonGarlic: 3 Cloves (crushed)
Chop chicken into bite-sized chunks.
Chop Onions and mushrooms into fairly large pieces, and crush or very finely chop the garlic.
Add 2 teaspoons of olive oil to a large pan or wok and heat to a high heat.
Add the onions and garlic to the oil and fry until the onions begin to soften.
Add the chicken pieces and cook until well sealed, then add the chopped tomatoes, coriander leaf, curry powder, and cumin seed. Cook over a medium heat for around ten more minutes, or until the chicken is well cooked.
Add the yogurt and mix in well, and add cornstarch to thicken the sauce if necessary. Continue cooking over a medium heat until the sauce is a good thick texture.
Any extra spices (e.g garam masala, turmeric, chilli powder, cardamom) can be added according to taste.
Serve with whole wheat pita bread or brown rice.
