1 box of Near East Couscous1/2 cup each red and green peppers, cucumbers (peeled) and geen onions.1 cup chopped tomatoes3 tbsp extra virgin olive oil (lite)juice of a large lemon1/4 cup minced fresh mint
Cook the couscous as directed with out adding the oil or salt. While it is cooking dice up the veggies in to small pieces. After the couscous is done add the oil, lemon juice and veggies with the couscous into a bowl, fluffing with a fork. Add the mint. I thought it could use a bit more mint because I love the taste but I made it for a group the first time so I played it safe.
