Spicy Sausage & Lentil Soup

2 tbs. olive oil1 cup minced onion3/4 cup grated & minced carrot1 tbs. minced garlic1 lb. uncooked hot Italian sausage2 oz. dice ham7 cups water5 cups chicken broth1 lb. dry lentils1 medium tomato, diced2 tbs. vinegar1 tbs. minced fresh basil1 tbs. minced fresh parsley2 Bay leaves1½ tsp. salt1/2 tsp. ground black pepper1/2 tsp. dried thyme1/2 tsp. dried oregano1/2 tsp. dried red pepper flakes
Heat up olive oil in a dutch oven or large sausepot over medium heat. Add onion, carrot, and garlic. Remove sausage from casing and add it to the pan. Sauté for 8 minutes, stirring often. Break up the sausage into bite-size bits as it cooks. Add ham and cook for an additional minute.
Add the remaining ingredients to the pot, bring to a boil, then reduce heat and simmer for 1 hour.
Makes 12 one cup servings, or 6 two-cup bowl servings.
