Kids-Love-It Bean Pasta

Ingredients

1 lb. pasta, preferably rotini or elbows1 tbsp olive oil 1 onion, diced2 cloves garlic, minced1 8 oz. can black beans WITH liquid1 tbsp. Goya Recaito (or substitute 1 tbsp. fresh minced cilantro)½ cup grated parmesanSalt and pepper to taste
Start pasta water.
While water is heating up, sauté the onion and garlic in the olive oil, adding salt and pepper.
Add the entire can of beans, liquid included.
Stir in the recaito (or cilantro).
Simmer.
Cook pasta.
Just before pasta is done, stir the parmesan into the bean mixture.
Drain pasta. (You can return it to the pot or put it in a bowl, depending on how you’re going to serve it.)
Mix in the bean mixture.

I like the flavor, but we prefer more spice. I cooked the beans in with the onions too long I think as they got mushy when everything was mixed. Also, I did not use all the pasta as it seemed like too much. I am going to try it again, only with less pasta and perhaps raw onion and garlic.QUICK! - 2/12/09
