Cauliflower Split Pea Soup

Ingredients
2 tsp olive oil2 shallots, diced3 c water1/4 c brown rice1/4 c split peas1/2 tsp basil1/2 tsp salt1 c frozen cauliflower florets
Directions
Saute shallots in olive oil until translucent. Add water, rice, split peas, basil, and salt. Bring to a boil, then reduce heat and simmer for about 30 minutes. Add cauliflower and continue simmering until rice and split peas are tender.
