French Country Slow Cooker Chicken

Ingredients
1 medum onion, chopped6 medium carrots, cut in 1/4 inch slices5 celery ribs, chopped6-8 chicken breasts (calculations done for 8)1 tsp thyme1 tsp tarragonsalt & pepper to taste (calcs done with 1 tsp each)1 can (10.5 oz) cream of chicken soup1 pkg dry onion soup mix1/3 c apple juice or white wine2 tbsp cornstarch
Directions
Place onion, carrot, and celery in crockpot or slow cooker. Place chicken breasts on top. Add seasonings, top with cream soup, then dry soup mix. Cook on high for 3-4 hours, stirring once. combine apple juice and cornstarch until smooth. Add to crockpot and cook UNCOVERED for 15 minutes before serving. Serve with brown rice.
Makes 6-8 servings depending on how much chicken you use- calculations are done for 8.
