Ingredients
1 lb (2.25 cups) dried lentils4 cups chicken broth8 slices turkey bacon, chopped2 medium carrots, chopped3 medium potatoes, chopped1 medium onion, chopped4 cups water1 tsp dried thyme1/2 tsp salt1/2 tsp pepper
Directions
Mix all ingredients in a 4-6 qt slow cooker.
Cover and cook on low for 8-9 hours, or on high for 3-5 hrs or until lentils are tender. Stir well before serving.

    This soup is very good and easy to make, I added a bay leaf and some garlic, sage, and liquid smoke. I also used three kinds of lentils, and made it smooth with the immersion blender. This is yummy and healthy, lots of fiber. You can use low salt broth, to make the sodium lower. - 2/16/09

    Very good lentil soup! It was fast and easy to make. Thanks for the recipe and I'd like to thank the other members for their advices about seasoning. I added a bay leaf, some garlic. Also, I used chopped ham instead of turkey bacon because I had a lot of ham leftovers...Thanks again! - 5/2/09
