Potato & Ham Soup

Ingredients
8 Medium Potatoes (peeled)2 Medium Celery Stalks (chopped)1 Medium Onion (chopped)1 Lb Extra Lean Ham (diced)2 Cups Reduced Fat Sour CreamSalt & Pepper
Directions
Cut and dice potatoes into pot.
Cover with water & cook to medium firmness.
Add celery and onions.
Add Ham.
Boil ~ 5 more minutes.
Put sour cream in seperate bowl and add a cup of the stock to the sour cream and stir together.
Stir in sour cream.
Salt & Pepper to taste.
Let simmer for 10 minutes.

Makes ~ 10 2-cup servings.
