Vegan Zucchini Squash Banana Muffins

Ingredients
1 c. All-purpose Flour1/2 c. White Wheat Flour1 c. Oats or Granola2 tsp. Baking Powder1 tsp. Baking Soda1/2 tsp. Salt1 tsp. Cinnamon1 banana, mashed (preferably overripe)2/3 c. Butternut Squash, cooked and pureed1/3 c. Zucchini, grated2 tbsp. Orange Zest (optional) 1/3 c. Sugar1/2 c. Oil1 tsp Vanilla Extract2 tbsp Soy yogurt
Directions
1.) Mix dry ingedients in one bowl
2.) Mix wet and fruit/veggies in another bowl
3.) Combine dry and wet, mix just until flour dissapears
4.)Grease muffin pan and fill cups almost full
5.) Bake at 375 for 18 minutes or until toothpick inserted into center comes out clean

Makes about 11 medium sized muffins
