Tuscan Harvest Soup

1 large onion3 medium carrots3 stalks celery6 cloves garlic1 can white beans, rinsed and drained28 oz canned whole tomatoes, cut up1 sprig thyme32 oz chicken broth1/2 cup basil leaves, fresh & choppedsalt & pepper to taste
Over medium heat spray large stock pot with olive oil cooking spray. Add onions, carrots, and celery. Saute for 5-7 minutes. Add garlic and cook 1 minute.
To the mixture add beans, tomato w/ juices, thyme sprigs and chicken broth. Bring to a boil, reduce haeat and simmer until vegetables are tender, about 15 minutes. Add basil and cook an additional 10 minutes. Remove sprigs of thyme before serving. Season w/ salt and pepper to tase. Also good with parmesan cheese sprinkled on top, Serves 8.
