Homemade Cinnamon Applesauce

Ingredients
10 medium Fuji Apples, peeled cored and diced2 Tbsp ground cinnamon (or less if desired)3 Tbsp pure cane sugar (or less if desired)1/8 C cold water
Directions
Place the diced apples and the water into a medium sized dutch oven and turn cook on high, stirring occasionally, until apples start to break down (about 5 minutes). Bring heat down to low, cover and simmer apples, stirring occasionally, on low until they start to soften more (about 30-40 minutes). Add the cinnamon and sugar and stir in well. Continue to simmer on low, uncovered, apples are the desired consistency. Mash if desired.
